Recipes for Service  

The Smart Ground or TVP (Texturized Vegetable Protein) referred below is a 100 % Soybean product 
and can be found near the salad/salad dressing section (not in the frozen section) of Kroger/Meijer.   

Spaghetti =>
   2 lbs Spaghetti 
   1 lb Smart Ground 
   3 – 48 Oz bottles of Spaghetti sauce 
   4-6 medium onions chopped   
   Cook spaghetti. 
   Sauté onions and Smart Ground. 
   Mix the cooked spaghetti, spaghetti sauce, sautéed onions & Smart Ground.  
   Ensure that spaghetti is not dry while it is being served to the residents. 
   Add salt to taste.  
Chilli  =>
    4-6 medium onions chopped 
   10-15 cloves garlic chopped 
   2 – 28 Oz. Cans whole tomatoes 
   7-8 (15.5 Oz) cans dark red kidney beans 
   ~ 4 cups TVP 5-6 Pkgs. 
    (1.25 Oz) Chili Mix 
   7-8 teaspoons salt 1-2 tsp. 
   Black pepper (optional)  
   Chopped bell Peppers (fresh or frozen) – (optional)  

Fry onions and garlic in oil till brown. 
Stir in spices. 
Add remaining ingredients and sufficient water to cover. 
Bring to a boil, reduce heat and simmer for about 1 hr. 
If using frozen green pepper add towards the end.

Spaghetti recipe


Spaghetti (dry, 2lbs)

 Salt (to taste)

 Diced zuchinni (2)

 Dice yellow squash (2)

 Chopped onion (1/2)

 Colored peppers (1, optional)

 Prego/Ragu Sauce (2 bottles)

Note: These are some general guidelines for cooking spaghetti. Do check with the instructions on the

           pasta packet as each of them may require different cooking times

Add 8 quarts of water, 1-2 tsps of salt and a teaspoon of olive or vegetable oil into a large stock pot

Bring the water to boil

Add 2lbs of dry spaghetti pasta into the boiling water. Note: Don’t break the pasta; it will soften up within 30 seconds and fit into the pot.

Stir the pasta. As the pasta starts to cook, stir it well with the tongs so the noodles don’t stick to each other (or the pot).

Test the pasta by tasting it (Follow the cooking time on the package, but always taste pasta before draining to make sure the texture is right. Pasta cooked properly should be al dente—a little chewy.

Drain the cooked pasta in a colander and run noodles under cold water to stop the cooking. Leave it with some cold water to prevent it from sticking and set aside

Heat quarter cup olive oil

Add 2 tsps of cumin seeds and let it crackle

Add the vegetables and saute’ them till they are cooked

Add cooked spaghetti, the sauce and salt (to taste).

Mix well and bring everything to a simmer

Turn-off heat and is ready to serve.



Chilli recipe




Red kidney beans

3 small cans

Black beans

4 small cans

Prego sauce

1 X 22-25 oz

Prego or Raghu

Meatless crumbles or textured vegetable protein

~16 oz


Popular brands like Smart ground

Simple truth

Diced tomatoes (canned)

5 X 14.5 oz cans

Red bell pepper

3 (big)



3 small or 2 big


Yellow or summer squash

3 small or 2 big

Red Onions

Cut into julians

Divide into two equal parts

Frozen corn

1/4th of ?? lb bag

Red Chilli flakes

To taste


Chilli seasoning

To taste

GFS (we use Ancho chilli seasoning)


To taste


Olive oil

As needed

For sautéing vegetables

Cumin seeds

3 tsps


To taste


To taste


Procedure (Approx. 45-60 min including vegetable cutting)

1.    Add oil to stock-pot and heat oil

2.    Add cumin seeds and let it crackle

3.    Add all vegetables (except frozen corn and half the onions)

4.    Saute` vegetables for about 5 mins on medium heat

5.    Add all the beans. (Drain and wash the beans thoroughly before adding).

6.    Add the Prego sauce and the diced tomatoes to the pot

7.    Add the salt, sugar, chilli flakes, chilli seasoning

8.    Keep stirring frequently and allow the ingredients to come to a boil

9.    Add the remaining onions and the frozen corn.

10.  Let it simmer for another 5 min

11.  Turn-off heat.
