Chili recipe:

Spaghetti recipe

 

Ingredients

v  Spaghetti (dry, 2lbs)

v  Salt (to taste)

v  Diced zuchinni (2)

v  Dice yellow squash (2)

v  Chopped onion (1/2)

v  Colored peppers (1, optional)

v  Prego/Ragu Sauce (2 bottles)

Note: These are some general guidelines for cooking spaghetti. Do check with the instructions on the pasta packet as each of them may require different cooking times

 ·         Add 8 quarts of water, 1-2 tsps of salt and a teaspoon of olive or vegetable oil into a large stock pot

·         Bring the water to boil

·         Add 2lbs of dry spaghetti pasta into the boiling water. Note: Don’t break the pasta; it will soften up within 30 seconds and fit into the pot.

·         Stir the pasta. As the pasta starts to cook, stir it well with the tongs so the noodles don’t stick to each other (or the pot).

·         Test the pasta by tasting it (Follow the cooking time on the package, but always taste pasta before draining to make sure the texture is right. Pasta cooked properly should be al dente—a little chewy.

·         Drain the cooked pasta in a colander and run noodles under cold water to stop the cooking. Leave it with some cold water to prevent it from sticking and set aside

·         Heat quarter cup olive oil

·         Add 2 tsps of cumin seeds and let it crackle

·         Add the vegetables and saute’ them till they are cooked

·         Add cooked spaghetti, the sauce and salt (to taste).

·         Mix well and bring everything to a simmer

·    Turn-off heat and is ready to serve.

Prego or Raghu

Meatless crumbles or textured vegetable protein

~16 oz

(optional)

Popular brands like Smart ground

Simple truth

Diced tomatoes (canned)

5 X 14.5 oz cans

 

Red bell pepper

3 (big)

Diced

Zuchini

3 small or 2 big

Diced

Yellow or summer squash

3 small or 2 big

Diced

Celery

1 bunch

Diced

Red Onions

2 big

Cut into julians

Divide into two equal parts

Frozen corn

1/4th of ?? lb bag

 

Red Chilli flakes

To taste

Julienned

Chilli seasoning

To taste

GFS (we use Ancho chilli seasoning)

Garlic

To taste

Optional

Olive oil

As needed

For sautéing vegetables

Cumin seeds

3 tsps

 

Salt

To taste

 

Sugar

To taste

 

 

Procedure (Approx. 45-60 min including vegetable cutting)

1.    Add oil to stock-pot and heat oil

2.    Add cumin seeds and let it crackle

3.    Add all vegetables (except frozen corn and half the onions)

4.    Saute` vegetables for about 5 mins on medium heat

5.    Add all the beans. (Drain and wash the beans thoroughly before adding).

6.    Add the Prego sauce and the diced tomatoes to the pot

7.    Add the salt, sugar, chilli flakes, chilli seasoning

8.    Keep stirring frequently and allow the ingredients to come to a boil

9.    Add the remaining onions and the frozen corn.

10.  Let it simmer for another 5 min

11.  Turn-off heat.
